Proallium™ is based on organosulfur compounds present in the plant family Alliaceae (onions, garlics and leeks). It develops broad-spectrum action to control bacteria, yeast and mold to improve food safety and extend shelf-life. In addition, it eliminates or reduces the need for traditional preservatives, such as sorbates and benzoates.
Proallium™ is a flavoring agent with antimicrobial properties for the preservation and enhancement of sauces, prepared meals, salads, dressings, hummus, dairy and non-dairy emulsions and pasta fillings. In applications using heat treatments, Proallium™ allows a reduction in the applied temperature.
